What We’re Eating vol. 5

Hi, friend!  How are you?  I hope you’re taking good care of yourself.

Right now for me, amidst a million emotions, self care looks like:

  1. getting outside as often as possible and getting some sunshine
  2. sitting in front of my light therapy lamp every morning, reading scriptures, writing down a verse that stands out, and writing a gratitude list in my Rad and Happy journal
  3. feeding myself yummy and nutritious food (currently loving: visiting my local farmer’s market often and picking up a weekly CSA box of fresh produce from my friend’s health food market)
  4. meal planning and feeding my family super yummy things that we love to eat

I hadn’t made a proper grocery store run in a few weeks.  Our fridge and pantry were looking pretty sad.  So, on Sunday evening I asked my husband and kids what dinners they wanted to eat this week.  Early Monday morning, I braved Meijer, Aldi, and Costco — and honestly, it wasn’t too bad.  I tied on my mask and checked the items off of my list at each store.

Here’s what we’re eating this week:

Monday: Costco Lasagna

Tuesday: Fiesta Ranch Chicken + rice (my friend gave me the recipe and I can’t find one online — but I’ll do a blog post about it soon because it’s so easy and so delicious!)

Wednesday: Salisbury Steak +mashed potatoes + veggies

Thursday: Pineapple Chicken + rice

Friday: Pizza Delivery

Saturday: Orange Chicken + rice

Sunday: leftovers

I realize we’re eating a lot of rice this week, but it’s quick and easy – and goes so well with the dinners that my family requested (I bought a 15 lb. bag of rice at Costco and have plentyyyy 😂).  Also, it helps that we have a ton of produce from the farmer’s market and the CSA box that help us eat as many fruits and veggies as possible throughout the week.
