What We’re Eating vol. 7

Hi, friend!  How are you? 💛 How’s your week going so far?  Mine is going well — but it definitely feels s l o w w w w.  For a good chunk of the day today, I thought it was Wednesday.  Lo and behold, it’s only Tuesday.  I’m counting it a win!

Our fridge and cupboards were looking pretty sad on Sunday, so I got up bright and early on Monday morning to brave my personal grocery trifecta: Meijer, Aldi, and Costco.  I got everything I needed and was home in time to get everything unloaded and put away by noon.  Also — to those of you with little kids, take heart: one of the major upsides to them getting bigger is how helpful they are when it comes to unloading groceries and putting them away.  I also enjoy their excitement when they’re unloading the groceries and they find their favorite snacks that I picked up just for them.  My youngest exclaimed, “this is like Christmas!  But with food!” while putting his favorite yogurt and string cheese in the fridge and it gave me a good laugh. 😂

This week, I kept it fairly simple — but also added some new elements.

Here’s what we’re eating this week:

Monday Rotisserie chicken + pierogi + veggies (went with steamed broccoli yesterday and everyone loved the whole meal 👍)

Tuesday Taco salads — I let everyone build their own salad with these components: cut up lettuce, browned ground beef (love this recipe for the seasoning on the beef), sour cream, shredded cheese, guacamole, salsa, and this Mexican style street corn that is SO yummy!

Wednesday Baked Potato Bar — I’m going to bake a bunch of potatoes and then prepare some toppings (butter, sour cream, shredded cheese, bacon, green onions, broccoli with melted cheese, etc. — also, it’ll be a good opportunity to repurpose our taco salad leftovers too)

Thursday Fiesta Ranch Chicken + rice (I’m making a double batch of it this week.  It’s a family favorite and it’s so, so easy — I got the recipe from a friend and can’t find a recipe listed online.  So, when I make it, I’ll be sure and take some photos so I can post the recipe on here ASAP!)

Friday Pizza Pockets (we usually do pizza delivery on Friday nights but I’m so excited to try this recipe!  I think my kids will love it.)

Saturday Chicken Potstickers + veggies + rice

Sunday Leftovers

This week we’re snacking on fresh peaches + lots of apples, along with carrots and hummus, string cheese, yogurt, and some crackers too (#balance).
