Hi, friend! How are you? 💛 I hope your week is going well so far.
We were still pretty well stocked on groceries, so I just made a quick run to Costco on Monday morning. My friend met me there and we (social distance) shopped together. It was kind of the best, pushing our carts next to each other, chatting and catching up, suggesting things to one another.
I grabbed their Chicken Alfredo that I’d been wanting to try as well as some fruits, veggies, breakfast items, and a few snacks.
Here’s what we’re eating this week:
Monday Chicken Alfredo (Costco’s was pretty dang good! But I’ve made my own several times before with jarred sauce and it’s better —it’s pretty simple and tastes so good. I’ll post a recipe on here the next time I make it.)
Tuesday Turkey Tacos (I used this recipe but I subbed ground turkey for the ground beef). I serve the taco meat with chopped butter lettuce, sour cream, shredded cheese, guacamole, salsa, and this Mexican style sweet corn. We like to make taco salad bowls. They’re so yummy!
Wednesday Rotisserie Chicken + pierogi + roasted veggies (this week, I’m roasting lots of carrots and asparagus — I like this roasted veggie recipe, but I heat my oven to 375F and only roast the asparagus for 5 to 10 minutes)
Thursday Chicken Burgers+ roasted potatoes (I love this recipe for the roasted potatoes)
Friday Pizza Delivery
Saturday Pulled Pork + Roasted Veggies (carrots and asparagus again)
Thankfully my husband doesn’t mind eating some of the same things we ate last week — thankfully, it’s all so delicious!
